Instructions

  1. Preheat and Prepare Sugar Mix: Preheat your oven to 350ºF (175ºC). In a small bowl, whisk together the cinnamon, brown sugar, and salt until well combined to create the sugar spice mix.
  2. Prepare Puff Pastry: Working with one sheet of thawed puff pastry at a time, lightly roll it out with a rolling pin to smooth the surface. Cut the sheet into 6 equal-sized pieces to make individual tart bases.
  3. Assemble Tarts: Place the 6 pastry pieces on a baking sheet lined with parchment paper. Spread about 1 tablespoon of apricot jam in the center of each piece. Sprinkle some of the cinnamon sugar mix over the jam, then layer the thinly sliced apples evenly on top. Finish with another light sprinkle of the cinnamon sugar mixture over the apples.
  4. Apply Egg Wash: Whisk the egg in a small bowl. Using a pastry brush, carefully brush the edges of each puff pastry piece with the egg wash to promote browning and give a beautiful golden finish after baking.
  5. Bake the Tarts: Bake the first batch in the preheated oven for 15 to 20 minutes until the pastry is puffed and golden brown. Repeat with any remaining pastry pieces. Allow the tarts to cool slightly before serving to enhance flavor and texture.
