Avocado Lime Sauce
- 1 ripe avocado
- 1 lime juiced
- 1/4 cup Greek yogurt (Or sour cream.)
- 1 clove garlic (minced)
- 1 tablespoon fresh cilantro (Chopped, optional.)
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Baking Sheet: Line a baking sheet with parchment paper for easy cleanup.
- Make Cajun Oil Mixture: In a mixing bowl, combine the olive oil, Cajun seasoning, salt, and black pepper. Mix until well blended.
- Season Salmon: Place the salmon fillets on the prepared baking sheet. Brush both sides of the salmon with the Cajun oil mixture.
- Bake Salmon: Bake the salmon in the preheated oven for approximately 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Prepare Sauce: While the salmon is baking, prepare the Avocado Lime Sauce. In a mixing bowl, mash the avocado until smooth.
- Mix Sauce Ingredients: Add the lime juice, Greek yogurt (or sour cream), minced garlic, salt, and pepper to the mashed avocado. Whisk until well combined and creamy.
- Rest Salmon: Once the salmon is done baking, remove it from the oven and allow it to rest for a few minutes.
- Serve: Serve the salmon with a generous drizzle of the Avocado Lime Sauce on top. Garnish with chopped cilantro, if desired.
Notes
- Adjust the amount of Cajun seasoning to suit your spice preference.
- Greek yogurt can be substituted with sour cream in the sauce.
- Using parchment paper makes cleanup easier.
- Allowing the salmon to rest a few minutes after baking enhances juiciness.
