- Cook the bacon: In a large pot, cook the chopped bacon over medium heat until crispy, about 5–7 minutes. Use a slotted spoon to remove the bacon and set it aside on a paper towel. Leave approximately 2 tablespoons of bacon fat in the pot for flavor.
- Sauté vegetables: In the same pot with the bacon fat, add the diced onion and celery. Sauté for 4–5 minutes until the onion softens and becomes translucent. Stir in the minced garlic and cook for an additional minute to release aromatic flavors.
- Add potatoes and corn: Stir in the diced potatoes and corn. Pour in the chicken broth and bring the mixture to a gentle boil. Reduce heat to a simmer and cook for about 15 minutes, or until the potatoes are fork-tender.
- Blacken the shrimp: While the chowder simmers, season the shrimp with the blackened seasoning. In a separate skillet, heat the olive oil over medium-high heat. Sear the shrimp for 2–3 minutes on each side until cooked through and slightly charred.
- Finish the chowder: Once the potatoes are tender, stir the heavy cream into the pot. Add half of the crispy bacon back into the chowder. Adjust seasoning with salt and black pepper according to your taste.
