For the Tomato Topping

  • 5 medium and ripe Tomatoes on the vine
  • A handful of fresh basil (roughly chopped)
  • 2 tbsp extra virgin olive oil
  • A splash of balsamic vinegar (optional)

For the Toast and Cheese

  • 4 large slices of sourdough bread (cut in half)
  • 1 large clove of garlic (skin removed)
  • 100 g goat’s cheese (at room temperature)
  • ½ tsp sea salt (freshly ground)
  • ¼ tsp freshly ground black pepper (optional)

Instructions

  1. Prepare Tomatoes: Cut the tomatoes in half and remove the core. Roughly chop the tomatoes, including the seeds for added flavor, then transfer to a large bowl.
  2. Mix Ingredients: Add 2 tablespoons of extra virgin olive oil and the chopped basil to the tomatoes. Gently toss to coat the tomatoes evenly with the oil and basil.
  3. Add Vinegar: If desired, add a splash of balsamic vinegar to the tomato mixture and gently mix.
  4. Toast Bread: Toast the sourdough slices on a skillet, under a grill, or on a BBQ until both sides are golden brown. Once toasted, rub one side of each slice with the garlic clove to infuse flavor.
  5. Spread Cheese: Generously spread the goat’s cheese over the garlic-rubbed side of the toasted bread.
  6. Assemble Bruschetta: Pile the tomato mixture high onto the goat cheese spread toast. Season with freshly ground sea salt and a pinch of freshly ground black pepper if desired. Serve immediately.
