  • 450 g ground beef, 80% lean, 20% fat
  • 1 onion, finely diced
  • 1 tablespoon fresh garlic, minced
  • 1 cup bell pepper, chopped
  • 1 to 2 Serrano peppers, chopped (optional)
  • 3 tablespoons tomato paste
  • Salt, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika powder
  • 0.5 teaspoon chili powder
  • 1 teaspoon red chili flakes
  • 1 teaspoon black pepper
  • 1 teaspoon cumin powder
  • 180 ml water
  • 2 tablespoons oil

  • 4 large tortillas, cut in half
  • 3 tablespoons butter or garlic butter
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded

Instructions

  1. Sauté aromatics Heat 2 tablespoons of oil in a pan over medium heat. Add diced onion and minced garlic. Sauté for 1 to 2 minutes until the onion is translucent and fragrant.
  2. Brown the beef Add ground beef to the pan. Cook for 3 to 4 minutes, stirring occasionally, until beef is no longer pink and begins to brown.
  3. Season the mixture Season beef with salt, black pepper, smoked paprika, garlic powder, chili powder, red chili flakes, and cumin powder. Mix thoroughly to ensure even distribution of spices.
  4. Incorporate tomato paste Stir in tomato paste and sauté for 2 to 3 minutes to deepen the flavor and blend ingredients.
  5. Simmer the filling Pour in 180 ml water. Simmer over medium heat for 8 to 10 minutes, stirring occasionally, until the water has mostly evaporated and the beef is cooked through.
  6. Add fresh peppers Stir in chopped bell peppers and Serrano peppers if using. Sauté for another 2 to 3 minutes. Remove from heat and allow filling to cool slightly.
  7. Preheat oven to 200°C.
  8. Assemble the pockets Cut each tortilla in half. Place shredded mozzarella cheese in the center of each half, add 2 to 3 tablespoons of beef filling, then fold to form a triangle and seal the edges. Repeat with all tortilla halves.
  9. Prepare the baking dish Grease a round baking dish with butter or garlic butter. Arrange filled tortilla pockets in a single layer.
  10. Add butter and cheese topping Brush tops of pockets with butter or garlic butter. Sprinkle remaining mozzarella and cheddar cheese evenly over the top.
  11. Bake until golden and melted Bake in preheated oven for 15 to 20 minutes, or until cheese is fully melted, bubbly, and tortillas are golden.
  12. Serve warm Remove from oven and allow to cool slightly before serving to enjoy at optimal texture and flavor.
