  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese (any variety)

Instructions

  1. Brown beef and onions: In a large skillet over medium-high heat, add olive oil, ground beef, and onion. Cook until beef is browned and onions are translucent (about 8-10 minutes). Drain excess grease.
  2. Add garlic and seasoning: Stir in garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add liquids and tomato paste: Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Cook rice: Stir in rice; return to a boil then cover and reduce heat. Simmer for 15 minutes without lifting the lid.
  5. Melt cheese: Sprinkle cheese over the rice mixture and let it melt for about 5 minutes before serving.
