  2. Clean and dry the fruit: Thoroughly wash your fruit to remove any dirt or pesticides, then completely dry each piece to ensure the chocolate adheres properly.
  3. Chop the chocolate: Coarsely chop the chocolate bars, setting aside one quarter of this portion finely chopped for tempering.
  4. Start melting the chocolate: Place the coarsely chopped chocolate in a microwave-safe bowl. Microwave on full power for 30 seconds, then stir. Repeat for another 30 seconds and stir again, scraping the sides and bottom thoroughly.
  5. Continue melting the chocolate: Heat the chocolate in short bursts of 5-10 seconds, stirring vigorously after each to prevent scorching, until about 70% of the chocolate is melted and the rest begins to melt through residual heat.
  6. Temper the chocolate: Add half of the finely chopped reserved chocolate to the melted mixture and stir until smooth. Gradually add the remaining finely chopped chocolate in small amounts, stirring after each addition until fully melted.
  7. Test tempering: Dip the back of a metal spoon into the chocolate and leave it on the counter. It should start to set within 5-8 minutes with a glossy finish and no streaks. If not, add more finely chopped chocolate and stir until properly tempered.
  8. Dip the fruit: One at a time, dip each piece of fruit into the tempered chocolate. Shake off excess and gently scrape the rim of the bowl to prevent clumps of chocolate.
  9. Optional embellishments: Sprinkle chopped nuts or sprinkles on the chocolate-coated fruit before it sets, or drizzle with white or milk chocolate for extra decoration once set.
  10. Chill or serve: Serve immediately or place the fruit on the lined baking sheet uncovered in the refrigerator for up to 2 days. Dry fruits like strawberries and cherries can remain at room temperature for up to 24 hours without issue.
