  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Brown beef: In a large pot, heat olive oil over medium heat and brown the ground beef, breaking it up with a spoon. Drain excess fat if needed.
  2. Cook vegetables: Add onion, garlic, carrots, and celery. Cook for 5–7 minutes, until vegetables soften and onions are translucent.
  3. Stir in flavors: Stir in diced tomatoes, Italian seasoning, and bay leaf. Let cook for 2–3 minutes.
  4. Simmer broth: Pour in beef broth and bring the mixture to a boil. Reduce heat, cover partially, and simmer for 20 minutes.
  5. Add potatoes: Add diced potatoes and continue simmering for 15–20 minutes, until potatoes are fork-tender.
  6. Finish soup: Stir in frozen peas and cook for 5 minutes. Remove the bay leaf and adjust seasoning with salt and pepper to taste.
