Ingredients

Scale

Base

  • 1 slice toast (sourdough, wholegrain, etc)
  • 1/3 cup cottage cheese

Seafood and Vegetables

  • 2 ounces smoked salmon
  • 4 slices red onion
  • 1 teaspoon capers
  • 1 sprig fresh dill
  • 1/4 avocado (sliced)
  • 1/4 large heirloom tomato
  • 2 cherry tomatoes (halved)
  • 6 slices cucumber
  • 1/8 cup arugula

Seasonings and Oils

  • 1 teaspoon olive oil (for avocado)
  • 1/2 teaspoon olive oil (for tomato)
  • 1/8 teaspoon red pepper flakes
  • 1/8 teaspoon salt (for tomatoes)
  • 1/8 teaspoon pepper (for tomatoes)
  • 1/8 teaspoon salt (for arugula)
  • 1/8 teaspoon pepper (for arugula)
  • 1/4 teaspoon everything but the bagel seasoning

Egg and Garnishes

  • 1 poached egg (or hard boiled/fried/scrambled)
  • 1 teaspoon honey
  • 1/4 peach (thinly sliced)
  • 4 grapes (halved)
  • 1 teaspoon walnuts (crushed)

Instructions

  1. Toast the bread: Toast the slice of bread to your preferred level of crispiness using a toaster or oven. This forms the sturdy base for the toppings.
  2. Spread cottage cheese: Evenly spread 1/3 cup of cottage cheese over the warm toast, creating a creamy layer that balances the strong flavors of the toppings.
  3. Add toppings: Arrange smoked salmon, red onion slices, capers, fresh dill, avocado slices (tossed lightly with olive oil and red pepper flakes), heirloom tomato and cherry tomatoes (seasoned with olive oil, salt, and pepper), cucumber slices, and arugula (also seasoned with salt and pepper) on top of the cottage cheese. Place the poached egg on the side or on top, sprinkle with everything but the bagel seasoning.
  4. Garnish and serve: Drizzle honey over the sliced peach and grapes, then place them alongside the toast. Sprinkle crushed walnuts over the fruit for added texture. Serve immediately to enjoy the fresh flavors and crisp textures.

Notes

  • You can customize the egg to your preference: poached, fried, hard boiled, or scrambled all work well.
  • Use any whole grain, sourdough, or gluten-free bread to accommodate dietary needs.
  • The combination of smoked salmon and cottage cheese offers a rich source of protein and healthy fats.
  • This recipe can be doubled or tripled easily for multiple servings.
  • For a vegan version, replace cottage cheese with a plant-based spread and omit smoked salmon and egg.
