  • 1 pound Yukon gold potatoes, cubed
  • 1 ¼ pounds sirloin steak, cubed
  • ¼ cup ghee or butter (adjust as needed for cooking)
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon oregano
  • Sea salt and black pepper to taste
  • ¼ cup Fresh parsley for garnish

Instructions

  1. Heat Potatoes: Heat 1 tablespoon olive oil and 2 tablespoons of ghee in a cast iron skillet over medium heat. Add cubed potatoes, minced garlic, thyme, oregano, salt, and pepper. Cook until golden brown and tender (8-10 minutes). Set aside.
  2. Cook Steak: Increase heat to medium-high and add remaining ghee and seasoned steak cubes to the skillet. Sear undisturbed for 2 minutes, then cook until desired doneness.
  3. Combine Ingredients: Return cooked potatoes to the skillet and stir gently to combine.
  4. Garnish and Serve: Garnish with fresh parsley and serve hot.
