Ingredients
- 1 tablespoon olive oil
- 20 g unsalted butter
- 1 large onion, finely chopped
- 4 garlic cloves, chopped
- 1 tablespoon fresh ginger, chopped
- 2 tablespoons medium curry powder
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon
- 1 tablespoon tomato paste
- 250 ml chicken stock
- 400 ml coconut milk
- 450 g cooked turkey, shredded
- 100 g baby spinach
- Fresh coriander, to garnish
- Prepare the Aromatics Warm olive oil in a large, deep pan over medium heat and add the butter until melted. Sauté the chopped onion for 3–4 minutes until softened.
- Sauté Garlic, Ginger and Spices Add the chopped garlic and ginger to the pan and cook for 1 minute until aromatic. Stir in the curry powder, garam masala, ground coriander and cinnamon, combining thoroughly.
- Develop the Sauce Mix in the tomato paste, chicken stock and coconut milk. Stir well and let it gently simmer for 2–3 minutes until the sauce begins to thicken.
- Incorporate Turkey Add the shredded turkey, reduce the heat and simmer for 5 minutes, allowing the sauce to thicken further and the flavours to infuse.
- Finish with Spinach Scatter in the baby spinach, cover the pan, and simmer for 2 minutes until wilted.
- Serve and Garnish Spoon the curry into bowls, garnish with fresh coriander and serve hot with rice or naan if desired.
