Ingredients

Scale

Wraps

  • 8 rice paper wrappers

Egg Filling

  • 4 large eggs (chicken or duck)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup finely chopped fresh vegetables (carrots, bell peppers, cucumbers)

Herbs and Sauce

  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • Low-sodium soy sauce, for serving
  • 12 tablespoons cooking oil (vegetable or canola oil) for frying

Instructions

  1. Prepare egg mixture: In a bowl, whisk together the eggs with salt and black pepper until fully combined. Optionally, fold in the finely chopped fresh vegetables to add crunch and flavor.
  2. Soften rice paper wrappers: Submerge each rice paper wrapper in warm water for about 10-15 seconds until it becomes pliable but not overly soft to avoid tearing.
  3. Assemble wraps: Lay the softened rice paper flat on a clean surface. Spoon a portion of the egg mixture onto the bottom third of the wrapper, then layer with fresh cilantro and mint leaves on top of the egg.
  4. Roll the wraps: Fold the sides of the rice paper over the filling, then roll tightly from the bottom up to encase the egg and herbs securely within the wrapper.
  5. Fry the wraps: Heat cooking oil in a non-stick skillet over medium heat. Place the wraps seam-side down in the pan. Fry for 3-4 minutes per side or until the exterior is golden brown and crispy, carefully turning to cook evenly on both sides.
  6. Serve: Remove from pan and drain any excess oil on paper towels. Serve the crispy wraps warm, accompanied by low-sodium soy sauce or your favorite dipping sauce.

Notes

  • Use fresh, crisp vegetables to maintain a crunchy texture inside the wraps.
  • Do not soak the rice paper wrappers too long to prevent them from becoming too fragile to roll.
  • Cooking on medium heat ensures the egg cooks through while achieving a golden, crispy exterior.
  • Customize fillings with other herbs such as basil or green onions for extra flavor.
  • Can be made with duck eggs for a richer taste and texture.
  • These wraps are best enjoyed immediately for maximum crispiness.
