Earl Grey Almond Frangipane

  • 56 g unsalted butter, room temperature (¼ cup)
  • 75 g granulated sugar (¼ cup + 2 tbsp.)
  • 1 egg, room temperature
  • ½ tsp almond extract
  • 120 g almond flour (1 cup)
  • 22 g all-purpose flour (3 tbsp.)
  • ⅛ tsp salt
  • 1 sachet Earl Grey tea

Toppings

  • 28 g sliced almonds
  • 85 g semi-sweet chocolate baking bar or chocolate chips (1/3 cup)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the croissants.
  2. Make Simple Syrup: Boil 35 g water using a kettle or microwave, then pour over 35 g granulated sugar in a heat-safe bowl. Stir until the sugar dissolves completely, then add one Earl Grey tea sachet and let it steep while you prepare the frangipane.
  3. Prepare Earl Grey Almond Frangipane: Using a hand mixer or by hand, beat 56 g unsalted butter with 75 g granulated sugar until the mixture is light and fluffy. Add one egg and ½ tsp almond extract, mixing well to combine. Fold in 120 g almond flour, 22 g all-purpose flour, ⅛ tsp salt, and the contents of one Earl Grey tea sachet. Mix until fully incorporated.
  4. Assemble Croissants: Slice each croissant lengthwise, leaving one end slightly attached. Brush the inside with the Earl Grey simple syrup using a pastry brush. Pipe or spread a generous amount of frangipane onto one side of each croissant, reserving some for topping. Chop the chocolate into chunks and scatter evenly over the frangipane, reserving a bit for finishing.
  5. Fill and Top: Fold the croissant top half back over, then pipe a decorative squiggly line of remaining frangipane on top. Press sliced almonds and the remaining chocolate chunks onto the piped frangipane for texture and flavor.
