Chantilly Cream Ingredients
- 240 mL heavy cream (ideally 35% fat or higher, 1 cup)
- 25 g sugar (about 2 tbsp, adjust to taste)
- 1 tsp vanilla extract
- 1 pinch sea salt (optional but recommended)
- Chill the ingredients and equipment: Ensure the heavy cream is well chilled. For best results, chill the mixing bowl for 15 to 30 minutes, especially in warm climates.
- Combine ingredients: Pour the chilled heavy cream into the mixer bowl, then add sugar, sea salt, and vanilla extract.
- Start whisking: Use a handheld electric mixer or a stand mixer with a whisk attachment to begin whipping the cream.
- Control the whisking speed: Whisk the cream on low to medium speed for small amounts (1-3 cups), or medium-high speed for larger quantities (4 cups or more) to avoid deflation.
- Monitor consistency: Frequently check the cream’s texture as it thickens and progresses through whipping stages.
- Identify soft peaks: At this point, peaks will droop completely when the whisk is lifted, forming soft, gentle folds.
- Scrape the bowl: Use a spatula to fold the cream evenly by scraping down the bowl sides if needed.
- Whip to mid peaks: Continue whisking until the cream forms peaks that fold over at about 90°, with visible tips.
- Switch to manual whisking: To gain control and prevent overwhipping, finish whisking by manually stirring with the whisk attachment or a wire whisk.
- Achieve stiff peaks: Whisk further until creamy smooth stiff-ish peaks form, bending between 45° and 90° without breaking.
- Stop whisking: Halt whisking at this point to prevent overwhipping; the cream will continue to thicken as handled.
- Use immediately: For best texture and fluffiness, use the Chantilly cream right after preparation.
Notes
- Make sure all equipment and ingredients are chilled to achieve best whipping results.
- Adjust sugar quantity according to sweetness preference.
- The pinch of sea salt enhances the flavor but is optional.
- Overwhipping can turn cream into butter, so monitor carefully when whisking.
- Whipped cream is best used fresh, but can be stored in the refrigerator for a few hours.
