Instructions

  1. Cook the eggs: Place the eggs in a single layer in a saucepan and cover with cold water by 1 to 2 inches. Heat over high heat until the water comes to a rolling boil. Cover the saucepan with a lid, cook for 30 seconds, then remove from heat and let the eggs stand in the hot water for 11 to 12 minutes.
  2. Cool the eggs: A minute before the eggs finish cooking, prepare a bowl of ice water. Transfer the eggs to the ice water using a slotted spoon and leave them to cool for at least 5 minutes or longer. This stops the cooking process and makes peeling easier.
  3. Prepare the eggs: Crack and peel the shells carefully. If peeling is difficult, return the eggs to the ice water for 5 more minutes and try again.
  4. Make the salad: Dice the peeled eggs into a bowl. Stir in mayonnaise, celery, chopped herbs, lemon juice, salt, and pepper. Taste and adjust the seasoning as desired.
