Ingredients

Scale

Ingredients

  • 1 pint cherry tomatoes (about 20), washed and dried
  • 20 small fresh basil leaves, washed and dried
  • 20 small mozzarella balls (Bocconcini or Ciliegine), drained
  • ½ cup sweet balsamic glaze (store-bought or homemade)
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 20 wooden skewers or toothpicks (34 inches long)

Instructions

  1. Prepare the balsamic glaze: If making your own, pour ½ cup balsamic vinegar into a small saucepan. Add 1 tablespoon honey or brown sugar. Bring to a gentle boil over medium heat, then reduce to low and simmer until thickened, about 10-15 minutes. Remove from heat and let cool.
  2. Rinse cherry tomatoes and basil leaves: Rinse cherry tomatoes and basil leaves under cold water and pat dry. Drain mozzarella balls well; slice in half if too large.
  3. Assemble skewers: Assemble skewers by threading one cherry tomato, one folded basil leaf, and one mozzarella ball onto each skewer or toothpick.
  4. Arrange and season: Arrange skewers neatly on a serving platter. Drizzle with extra virgin olive oil, then season with salt and freshly ground black pepper.
  5. Drizzle balsamic glaze: Drizzle the cooled sweet balsamic glaze generously over the skewers.
  6. Serve or chill: Serve immediately or chill covered in the refrigerator for up to 2 hours. Bring to room temperature before serving.

Notes

  • Chill the assembled skewers covered in the refrigerator for up to 2 hours and bring them to room temperature before serving for best taste.
