This easy strawberry butter is a luscious and fresh spread made by blending ripe strawberries with softened butter and a touch of powdered sugar, perfect for enhancing your toast or desserts.

  • 1 cup fresh strawberries (room temperature)
  • 1/4 cup water (cold)
  • 1 cup unsalted butter (softened)
  • 2 tablespoons powdered sugar (more or less to taste)

Instructions

  1. Puree Strawberries: In a blender, puree the strawberries and water for about 2 minutes. Stop and scrape down the sides if needed. If you need to add a little more water to really get a good puree, add a tablespoon at a time.
  2. Add Sugar: Add the sugar and blend again for about 30 seconds.
  3. Blend Butter: Add the room temperature butter and blend for 1-2 minutes or until everything is well combined and the butter is a more “whipped texture”.
  4. Chill (Optional): You can serve immediately, but I like to refrigerate for about 30 minutes before serving.
  5. Storage: Keeps for up to one week to two weeks in an airtight container in the refrigerator.
