Strawberry Jam
- 1½ pound fresh strawberries (chopped)
- 1⅝ cups granulated sugar
- ⅜ cup lemon juice
Mascarpone Filling
- 1¼ cups heavy cream (cold)
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 3/4 cup mascarpone (cold)
Assembly
- ½ cup Amaretto
- ½ cup whole milk
- 26 ladyfingers or savoiardi
- ½ pint fresh strawberries (sliced)
- ¾ ounce freeze-dried strawberries (ground to a powder)
- Strawberry Jam Combine strawberries, sugar, and lemon juice in a medium saucepan.
- Cook Jam Cook and stir over medium low heat until sugar dissolves, strawberries break down, and the mixture thickens into jam, about 15-20 minutes. Set aside.
- Mascarpone Filling Combine cream, sugar, and vanilla in a medium bowl.
- Beat Cream With an electric mixer fitted with the whisk attachment, beat to soft peaks.
- Add Mascarpone Add mascarpone.
- Beat Mixture Beat to medium peaks. Set aside.
- Assembly Spray a 9-inch square pan lightly with cooking spray.
- Mix Soaking Liquid Combine amaretto and milk in a small flat-bottom container.
