Strawberry Jam

  • pound fresh strawberries (chopped)
  • 1⅝ cups granulated sugar
  • ⅜ cup lemon juice

Mascarpone Filling

  • 1¼ cups heavy cream (cold)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup mascarpone (cold)

Assembly

  • ½ cup Amaretto
  • ½ cup whole milk
  • 26 ladyfingers or savoiardi
  • ½ pint fresh strawberries (sliced)
  • ¾ ounce freeze-dried strawberries (ground to a powder)

Instructions

  1. Strawberry Jam Combine strawberries, sugar, and lemon juice in a medium saucepan.
  2. Cook Jam Cook and stir over medium low heat until sugar dissolves, strawberries break down, and the mixture thickens into jam, about 15-20 minutes. Set aside.
  3. Mascarpone Filling Combine cream, sugar, and vanilla in a medium bowl.
  4. Beat Cream With an electric mixer fitted with the whisk attachment, beat to soft peaks.
  5. Add Mascarpone Add mascarpone.
  6. Beat Mixture Beat to medium peaks. Set aside.
  7. Assembly Spray a 9-inch square pan lightly with cooking spray.
  8. Mix Soaking Liquid Combine amaretto and milk in a small flat-bottom container.
  9. Dip Ladyfingers Using half the ladyfingers, dip each one in amaretto mixture, turning to make sure it is soaked through, and place in bottom of prepared pan.
  10. Layer Strawberries Layer with half of sliced strawberries.
  11. Spread Mascarpone Spread half of mascarpone mixture evenly across top of strawberries.
  12. Spread Jam Top with half of strawberry jam and spread evenly.
  13. Repeat Layers Repeat layers.
  14. Finish Sift strawberry powder over top.
