Scale

Main Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion, finely diced
  • 1 cup shredded carrots
  • 3 garlic cloves, finely minced
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage, about 8 cups shredded
  • 3 tablespoons soy sauce or Tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice (for serving)
  • Green onions (green parts only), thinly sliced (for garnish)
  • Toasted sesame seeds (for garnish)
  • Sriracha Mayo (optional, for serving)

Instructions

  1. Cook the Turkey: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and cook until it is almost fully cooked through, about 5 to 6 minutes, breaking it up as it cooks.
  2. Sauté Vegetables: Push the turkey to one side of the skillet and add the remaining tablespoon of olive oil. Add the finely diced onion and cook for 3 to 4 minutes, stirring occasionally until softened. Then add the shredded carrots, minced garlic, and fresh ginger, cooking for an additional 2 minutes while stirring frequently to combine the flavors.
  3. Add Broth and Scrape Pan: Pour in the chicken broth and use a spatula or wooden spoon to scrape up any browned bits from the bottom of the pan. This adds depth to the flavors.
  4. Cook the Cabbage: Add the shredded cabbage, soy sauce or Tamari, rice vinegar, salt, and black pepper to the skillet. Stir everything well to combine. Cover the pan, reduce the heat to medium-low, and cook for 12 to 15 minutes until the cabbage is tender to your liking.
  5. Finish with Sesame Oil: Remove the skillet from the heat and stir in the toasted sesame oil to impart a nutty aroma and rich flavor.
  6. Serve: Serve the egg roll in a bowl mixture over cooked white rice if desired. Garnish with sliced green onions, toasted sesame seeds, and a drizzle of sriracha mayo for a spicy kick if you like.

Notes

  • Use fresh ginger instead of ground ginger for a brighter, more vibrant flavor.
  • Shred the cabbage finely to ensure it cooks evenly and quickly.
  • Sriracha mayo is optional but adds a great creamy and spicy dimension to the dish.
  • For a lower carb option, serve without rice or substitute with cauliflower rice.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated on the stovetop or microwave.
