Cake
- 100 g granulated sugar
- 240 ml plain Greek yogurt
- 60 ml vegetable oil
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 125 g all-purpose flour
- 1/4 teaspoon cream of tartar (optional)
- 1/4 teaspoon salt
- 1 teaspoon baking powder
Topping
- 15 g powdered sugar
- 120 ml heavy whipping cream
- 1/2 teaspoon vanilla extract
- Preheat and prepare pan. Set your oven to 175°C. Get an 20 cm round cake pan ready by greasing it and adding parchment paper.
- Mix dry ingredients. In a separate bowl, sift together the flour, baking powder, and salt. Gradually mix these dry components into the wet mixture until just blended.
- Mix wet ingredients and yolks. Grab a large mixing bowl. Whisk the yogurt, vegetable oil, and vanilla extract together. Then add in the egg yolks and granulated sugar. Whisk everything until it’s smooth and well mixed.
- Whip egg whites. Using a clean bowl, whisk the egg whites together with cream of tartar until soft peaks appear. Gradually mix in 1 tablespoon of sugar, whisking until stiff peaks form.
- Combine batter. Carefully incorporate the whipped egg whites into the cake batter in 2 to 3 parts, being gentle so you don’t deflate it.
- Bake the cake. Pour the batter into the prepared pan and level the top. Bake for 25 to 30 minutes or until golden brown, and a toothpick comes out clean when you check.
- Rest and cool cake. After baking, let the cake rest in the pan for about 10 minutes. Then, move it to a wire rack to finish cooling down.
- Whip cream topping. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until you get stiff peaks.
- Finish and serve. When the cake’s cooled down completely, spread the whipped cream on top. You can serve it right away, maybe topped with fresh berries or a sprinkle of powdered sugar.

- Cream of tartar is optional but helps stabilize the whipped egg whites.
- Be gentle when folding the egg whites to keep the batter light and fluffy.
- Chilling the bowl for whipping cream gives better volume and texture.
