Instructions

  1. Prepare the Bread: Cut the baguette diagonally into 1/2 to 3/4 inch slices, yielding about 22 slices. Arrange them in a single layer on a baking sheet. Place under a preheated broiler on high until the tops are lightly toasted and golden brown, about 1-3 minutes. Watch carefully to avoid burning.
  2. Make the Feta Spread: In a small bowl, combine the crumbled feta cheese, Greek yogurt, minced garlic, and 1 tablespoon of chopped fresh basil. Mash the mixture thoroughly with a fork until creamy and well combined. Cover and refrigerate if not using immediately, up to 8 hours.
  3. Prepare the Tomato-Cucumber Topping: In another small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper until well blended. Add the chopped tomatoes (with seeds removed), peeled and chopped cucumber, diced red onion, and the remaining 1 tablespoon of chopped fresh basil. Mix gently to combine. Cover and refrigerate if not using right away, up to 8 hours.
