Ingredients

Scale

Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken breasts, thinly sliced
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Bowl Ingredients

  • 2 cups cooked rice or quinoa
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely grated and squeezed dry
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon salt

Instructions

  1. Make the marinade: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Marinate chicken: Add the sliced chicken to the marinade, toss to coat, cover, and refrigerate for at least 20 minutes and up to 4 hours.
  3. Cook chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 4–5 minutes per side, or until cooked through and lightly charred. Let rest for a few minutes, then slice.
  4. Prepare tzatziki sauce: In a small bowl, combine Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill if using, and salt.
  5. Mix sauce: Stir until smooth and well combined. Adjust seasoning to taste and refrigerate until ready to serve.
  6. Assemble bowls: Divide the cooked rice or quinoa among 4 bowls.
  7. Add toppings: Top each bowl with sliced Greek chicken, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  8. Add sauce and garnish: Spoon tzatziki sauce over the top and sprinkle with chopped parsley.
  9. Serve: Serve immediately, with extra lemon wedges on the side if desired.

Notes

  • Marinate chicken for at least 20 minutes and up to 4 hours for best flavor.
  • Letting the chicken rest after cooking ensures juicier slices.
  • Squeeze excess liquid from grated cucumber to keep the tzatziki sauce from being watery.
  • Use fresh herbs like dill and parsley for authentic Greek flavor.
