Ingredients
- 2 1/2 lbs chicken breasts (cut into 1 1/2″ thick pieces)
- 2 medium zucchini (cut into thick rings)
- 1 red bell pepper (cut into 1 1/2″ thick pieces)
- 1 yellow bell pepper (cut into 1 1/2″ thick pieces)
- 1 purple onion (quartered)
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 Tbsp Worcestershire sauce
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 4 cloves garlic (minced)
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Make Marinade: Add all marinade ingredients to a medium bowl and whisk to combine.
- Marinate Chicken: Place chopped chicken into a large mixing bowl and pour marinade over meat. Stir to combine, cover and refrigerate overnight, stirring once or twice. For best results, marinate for 8 hours or more.
- Prepare Skewers: Skewer marinated meat alternating with the sliced veggies.
- Grill Kabobs: Grill the kabobs over med/high heat for about 10 min, rotating every 2-3 min for even grilling.
- Rest Kabobs: Remove kebobs from the grill and let them rest at least 5 min before serving.
- Serve: Garnish with parsley and serve.

- For best results, marinate chicken for 8 hours or more.
