  • 2 1/2 lbs chicken breasts (cut into 1 1/2″ thick pieces)
  • 2 medium zucchini (cut into thick rings)
  • 1 red bell pepper (cut into 1 1/2″ thick pieces)
  • 1 yellow bell pepper (cut into 1 1/2″ thick pieces)
  • 1 purple onion (quartered)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 Tbsp Worcestershire sauce
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 4 cloves garlic (minced)
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Make Marinade: Add all marinade ingredients to a medium bowl and whisk to combine.
  2. Marinate Chicken: Place chopped chicken into a large mixing bowl and pour marinade over meat. Stir to combine, cover and refrigerate overnight, stirring once or twice. For best results, marinate for 8 hours or more.
  3. Prepare Skewers: Skewer marinated meat alternating with the sliced veggies.
  4. Grill Kabobs: Grill the kabobs over med/high heat for about 10 min, rotating every 2-3 min for even grilling.
  5. Rest Kabobs: Remove kebobs from the grill and let them rest at least 5 min before serving.
  6. Serve: Garnish with parsley and serve.

Notes

  • For best results, marinate chicken for 8 hours or more.
  • Stir the marinade once or twice while refrigerating.
  • Rotate kabobs every 2-3 minutes for even grilling.
  • Let kabobs rest at least 5 minutes after grilling before serving.
