Ingredients

Scale

Lamb Chops

  • 2 racks lamb chops trimmed of excess fat

Marinade

  • ½ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon, minced (optional)
  • 2 teaspoons dried oregano (preferably Greek)*
  • 2 tablespoons fresh chopped parsley
  • 810 cloves garlic, finely chopped
  • 1 tablespoon kosher salt (or to taste)
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Prepare the Lamb Chops: Pat the lamb chops dry with paper towels. For thicker servings, slice each rack into 4 chops; for thinner servings, slice into 8 chops.
  2. Make the Marinade: In a small bowl, combine olive oil, lemon juice, lemon zest (if using), dried oregano, chopped parsley, finely chopped garlic, kosher salt, and freshly ground black pepper. Mix well to blend all flavors.
  3. Marinate the Lamb: Place the chops in a large zip-top bag and pour in the marinade, reserving ¼ cup to use later. Remove as much air as possible and seal tightly. Massage the marinade into the meat ensuring even coating. Refrigerate for at least 2 hours or up to overnight, flipping the bag occasionally to distribute the marinade evenly. Before cooking, let the chops come to room temperature for about 30 minutes.
  4. Preheat the Grill: Heat your grill to medium-high heat to ensure a hot surface for searing the chops.
  5. Grill the Lamb Chops: Place the lamb chops on the grill. Cook thinner chops for 3-4 minutes per side and thicker chops for 6-8 minutes per side, or cook to your preferred doneness. Medium-well is recommended for optimal flavor and tenderness.
  6. Rest and Serve: Transfer the grilled lamb chops to a platter and let them rest for a few minutes to redistribute the juices. Drizzle the reserved marinade over the chops just before serving for added freshness and flavor. Enjoy your delicious Greek-style lamb chops!

Notes

  • If you have fresh Greek oregano, substitute 2 teaspoons dried oregano with about 1 tablespoon fresh oregano for an even more authentic taste.
  • Marinating overnight enhances the flavor but a minimum of 2 hours will still produce tasty results.
  • Allowing the meat to come to room temperature before grilling ensures even cooking.
  • Adjust salt according to your taste and the saltiness of your olive oil.
  • Resting the lamb after grilling helps retain its juices and tenderness.
