Salmon and Marinade

  • 4 salmon fillets (6 ounces each)

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the marinade. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper to create the marinade.
  2. Marinate the salmon. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring each fillet is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill. Preheat the grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
  4. Prepare to grill. Remove the salmon from the marinade and let any excess drip off. Discard the marinade.
  5. Grill the salmon. Place the salmon fillets skin-side down on the grill. Cook for about 4-5 minutes, then carefully flip and grill for another 3-4 minutes, or until the salmon flakes easily with a fork and is cooked through.
