  • 1 teaspoon chili powder
  • 2 cups beef broth

Instructions

  1. Prepare the vegetables and heat the oil: Begin by heating oil in a pot over medium heat. Once hot, add chopped onions and cook until they become translucent. Then add minced garlic and continue cooking until fragrant.
  2. Brown the meat and soften peppers: Add the cubed chuck steak to the pot and cook until browned on all sides. Then add chopped bell peppers and cook for a couple of minutes until they begin to soften.
  3. Add tomato paste and tomatoes: Stir in the tomato paste and cook for an additional minute. Next, add the diced tomatoes to the pot and cook for a couple more minutes.
  4. Thicken and season the stew: Sprinkle the flour into the pot and cook until heated through, stirring constantly. Pour in the beef broth and season with salt, pepper, ground cumin, and chili powder. Stir well to combine and bring the mixture to a boil.
  5. Simmer the stew: Reduce the heat to low and cover the pot. Let the stew simmer gently for 2 hours, stirring occasionally. Add water as needed to keep the consistency from becoming too thick.
  6. Finish and serve: Once the meat is tender and the flavors have melded, serve the carne guisada warm. Garnish with chopped fresh cilantro for extra flavor if desired.
