Ingredients
- 1 lb strawberries (washed and hulled)
- 2 cups granulated sugar
- 9 cups cold water (divided)
- 1 teaspoon lemon zest
- 1½ cups fresh lemon juice ((the juice of about 10–12 lemons))
- ¼ teaspoon pure lemon extract
- ¼ teaspoon pure strawberry extract
- Prepare the Strawberry Puree
First, add your washed and hulled fresh strawberries into a blender. Blend them until you achieve a smooth, vibrant red puree. This will be the beautiful, aromatic base for our lemonade.
- Simmer the Syrup
Pour the strawberry puree into a large saucepan. Add 2 cups of the cold water, the granulated sugar, and the lemon zest. Adding the lemon zest now allows its oils to infuse gently into the syrup, enhancing the overall lemon flavor.
- Heat mixture
Heat this mixture on low heat, stirring continuously, just until the sugar has completely dissolved and the mixture reaches a light simmer. It’s crucial that you do not boil the mixture; a gentle simmer preserves the fresh, delicate flavors.
- Simmer gently
Let it simmer gently for about 5 minutes, continuing to stir occasionally to prevent any scorching at the bottom of the saucepan.
- Strain and Combine
Remove the strawberry syrup from the heat and allow the mixture to cool completely. Cooling is essential before straining, as it prevents steam from interfering with the process and ensures a better separation of solids.
- Strain mixture
Once cooled, double-strain the mixture into your serving pitcher. Use a fine mesh straining bag or several layers of cheesecloth over a fine-mesh sieve for a super clear, pulp-free lemonade.
- Add lemon and water
Now, stir in your fresh lemon juice and the remaining cups of cold water. Add the water a cup at a time while tasting until you achieve your desired level of sweetness and tartness.
- Add extracts
Finally, stir in the pure lemon extract and pure strawberry extract. These extracts provide an extra layer of flavor enhancement, ensuring a robust, well-rounded taste.
- Chill and Serve
Refrigerate your homemade strawberry lemonade until it is super cold. Chilling is crucial as it allows the flavors to meld beautifully and provides that ultimate refreshing experience.
- Serve
Give it a good stir before serving over plenty of ice. Garnish if desired with fresh strawberry slices, lemon slices, or a sprig of fresh mint.
Notes
- Do not boil the strawberry mixture to preserve fresh flavors.
