Spices & Aromatics

  • 2 tbsp Ghee or oil (Use ghee for a richer flavor.)
  • 1 tsp Cumin seeds
  • 1 stick Cinnamon stick
  • 4 pcs Green cardamom pods (Crush slightly.)
  • 2 pcs Bay leaves
  • 1 tbsp Ground coriander
  • 1 tbsp Ground cumin
  • 1 tsp Ground turmeric
  • 1 tsp Ground cloves
  • 2 tsp Salt (To taste.)
  • 1 tsp Black pepper (Freshly ground.)

Vegetables & Others

  • 2 medium Onions (Caramelized.)
  • 4 cloves Garlic (Minced.)
  • 1 inch Fresh ginger (Grated.)
  • 2 pcs Green bird’s eye chilies (Finely chopped.)
  • 1 pcs Red bell pepper (Cut into large chunks.)
  • 2 medium Medium tomatoes (Roughly chopped.)
  • 2 tbsp Tomato purée
  • 1 cup Lamb or chicken stock (Homemade preferred.)

Meat

  • 1.5 lbs Lamb (shoulder, leg, or neck) (Cut into pieces.)

Instructions

  1. Preheat your oven: Preheat your oven to 170°C (325°F fan).
  2. Heat spices: In a large, oven-safe pan, gently heat the ghee or oil over medium heat. Add the cumin seeds, cinnamon stick, and cardamom pods, frying them for 2–3 minutes until fragrant.
  3. Sauté aromatics: Toss in the chopped onions, garlic, and ginger. Sauté for about 5 minutes until softened and lightly golden.
  4. Add spices and herbs: Stir in the green chilies, bay leaves, ground coriander, cumin, turmeric, ground cloves, salt, and pepper. Cook for 2–3 minutes.
  5. Brown the lamb: Add the lamb pieces and stir to coat. Cook for 5–7 minutes until nicely browned.
  6. Add vegetables and stock: Mix in the red bell pepper, chopped tomatoes, tomato purée, and stock. Bring to a boil.
  7. Oven cook: Cover the pan and transfer it to the oven. Cook for 1 hour 15 minutes to 1 hour 30 minutes, until tender and sauce thickens.
  8. Serve: Remove from oven, top with fresh coriander, and serve warm alongside rice, chapati, and raita.
