Ingredients

Scale

Bread and Toppings

  • 16 slices baguette, ½ inch slices (Any crusty bread works well.)
  • olive oil (For brushing the baguette.)
  • ¼ cup chopped walnuts (Consider pecans or almonds.)
  • ground pepper to taste (Freshly cracked pepper is best.)
  • sea salt to taste (Essential for flavor enhancement.)

Goat Cheese Mixture

  • 200 g softened goat cheese (about ¾1 cup) (Cream cheese also makes a great substitute.)
  • 2 tbsp honey, divided (Can swap with maple syrup.)
  • 1 tsp fresh minced thyme leaves (Dried thyme can be used too, but in smaller amounts.)
  • 1 tsp lemon juice (Helps balance the sweetness.)
  • 1 each Zebroff Red Delicious Apple, thinly sliced (Any firm variety will work.)

Instructions

  1. How to Make Apple and Goat Cheese Crostini
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the bread
Arrange 16 half-inch thick slices of baguette on the baking sheet. Brush each slice lightly with olive oil, then bake for about 10 minutes, flipping halfway through.
  3. Toast walnuts
On the same baking sheet, spread the chopped walnuts and toast them for about 5 minutes.
  4. Make goat cheese mixture
In a mixing bowl, combine the softened goat cheese, a pinch of ground pepper, and 1 tablespoon of honey. Blend until smooth and creamy.
  5. Caramelize apples
In a skillet, melt a bit of butter over medium heat, add the thinly sliced apple, and sauté for 3-5 minutes until softened. Stir in the thyme, lemon juice, and remaining honey.
  6. Assemble crostini
Spread a generous layer of the goat cheese mixture on the toasted baguette slices. Layer the caramelized apple mixture, sprinkle with toasted walnuts, and drizzle with honey.

Notes

  • Any crusty bread works well instead of baguette.
  • Cream cheese can be used as a substitute for goat cheese.
  • Maple syrup can be used instead of honey.
  • Dried thyme can be used in smaller amounts if fresh is unavailable.
  • Consider using pecans or almonds instead of walnuts.
  • Freshly cracked pepper is best for flavor.
