Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 cup kimchi, chopped
- 1 medium yellow onion, sliced
- 1 cup bell peppers (any color), sliced
- 4 slices provolone or American cheese
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 tsp vegetable oil
- Optional: minced garlic and sugar for marinade
- Slice the beef, onion, and bell peppers. Prepare the beef, onion, and bell peppers by slicing them thinly and evenly to ensure quick and even cooking.
- In a bowl, mix soy sauce, sesame oil, optional garlic, and optional sugar. Marinate the beef for at least 15 minutes. Combine the marinade ingredients and coat the beef slices thoroughly. Let it marinate to develop flavor.
- Heat vegetable oil in a skillet over medium-high heat. Sauté onions and bell peppers until tender (about 5 minutes). Cook the vegetables until they soften and release their natural sweetness.
- Push veggies to one side; add marinated beef to the skillet. Cook until browned (about 5 minutes), stirring occasionally. Move the cooked vegetables aside and cook the marinated beef in the same pan until nicely browned.
- Mix in chopped kimchi; cook for an additional 2 minutes. Stir the kimchi into the skillet mixture and heat through to meld flavors.
- Assemble by placing the bulgogi mixture on toasted hoagie rolls and topping with cheese. Broil for about 2 minutes until cheese melts. Build your sandwiches and use the broiler to melt the cheese beautifully for serving.
Notes
- Marinate the beef for at least 15 minutes to enhance flavor.
- Optional minced garlic and sugar can be added to the marinade to customize taste.
- Broiling the assembled sandwich for about 2 minutes melts the cheese perfectly.
