  • 4 pounds roasting chicken (spatchcock)
  • 1 tbsp dried lavender flowers
  • 8 garlic cloves (minced)
  • 1/3 cup honey
  • 1 medium lemon (zested and juiced)
  • 2 tbsp olive oil
  • salt (black pepper to taste)

Instructions

  1. Prepare lavender: Place the dried lavender in a mortal and grind lightly with the pestle.
  2. Mix marinade: Add the minced garlic, dried lavender, honey, lemon juice, lemon zest, olive oil and salt and black pepper to taste to a bowl and mix to combine.
  3. Marinate chicken: Place the chicken in a shallow dish (or Ziploc bag) and pour the marinade over it.
  4. Refrigerate: Cover with plastic wrap and refrigerate overnight or for at least 4 hours.
  5. Remove from refrigerator: When the chicken is done marinating, remove the chicken from the refrigerator.
  6. Preheat oven: Preheat oven to 400ºF.
  7. Prepare to bake: Place the chicken in a roasting pan.
  8. Cover and bake: Cover with foil and bake for 30 minutes.
  9. Bake uncovered: Remove the foil and bake for 25-30 minutes or until a meat thermometer inserted into the thickest part of a thigh registers 165ºF.
  10. Rest chicken: Remove from the oven and allow to rest for 10 minutes before serving.

  • Marinate chicken overnight or for at least 4 hours for best flavor.
  • Use a meat thermometer to ensure the chicken is cooked to 165ºF for safety and juiciness.
