Ingredients
- 4 pounds roasting chicken (spatchcock)
- 1 tbsp dried lavender flowers
- 8 garlic cloves (minced)
- 1/3 cup honey
- 1 medium lemon (zested and juiced)
- 2 tbsp olive oil
- salt (black pepper to taste)
- Prepare lavender: Place the dried lavender in a mortal and grind lightly with the pestle.
- Mix marinade: Add the minced garlic, dried lavender, honey, lemon juice, lemon zest, olive oil and salt and black pepper to taste to a bowl and mix to combine.
- Marinate chicken: Place the chicken in a shallow dish (or Ziploc bag) and pour the marinade over it.
- Refrigerate: Cover with plastic wrap and refrigerate overnight or for at least 4 hours.
- Remove from refrigerator: When the chicken is done marinating, remove the chicken from the refrigerator.
- Preheat oven: Preheat oven to 400ºF.
- Prepare to bake: Place the chicken in a roasting pan.
- Cover and bake: Cover with foil and bake for 30 minutes.
- Bake uncovered: Remove the foil and bake for 25-30 minutes or until a meat thermometer inserted into the thickest part of a thigh registers 165ºF.
- Rest chicken: Remove from the oven and allow to rest for 10 minutes before serving.

- Marinate chicken overnight or for at least 4 hours for best flavor.
