Panna Cotta Base

  • 1/2 cup whole milk
  • 2 cups heavy cream
  • 1/4 cup granulated sugar
  • 1 tbsp matcha powder
  • 3 sheets gelatin

Instructions

  1. Prepare the molds: If you plan to unmold the panna cotta onto plates, lightly grease the inside of the glasses with vegetable oil, then use a paper towel to wipe out most of the oil, leaving only a light residue. Otherwise, the molds can be left uncoated.
  2. Soften the gelatin: Soak the gelatin sheets in cold water until they become soft, then set aside.
  3. Heat the dairy mixture: In a medium saucepan, combine milk, heavy cream, sugar, and matcha powder. Heat the mixture over medium heat until it simmers gently; do not allow it to boil. Remove from the heat immediately.
  4. Dissolve the gelatin: Remove excess water from the softened gelatin by squeezing the sheets, then add them to the warm pan. Stir constantly until the gelatin is fully dissolved. Next, stir in the vanilla extract.
  5. Strain and pour: Pour the mixture through a fine sieve to ensure smoothness, then evenly distribute it among your prepared molds.
  6. Chill: Refrigerate the panna cotta for at least 4 hours, or preferably overnight, until fully set.
  7. Unmold and serve: To unmold, briefly dip the bottom of each mold into hot water for about 5 seconds to loosen the panna cotta. Run a knife around the edges to release it, then carefully invert onto a serving plate. Serve chilled, optionally garnished with fresh seasonal fruits for added flavor and color.

  • Be careful not to boil the cream mixture as it can affect the texture of the panna cotta.
  • Use a fine sieve to ensure a silky smooth texture without any matcha clumps.
