Scale

Ingredients

  • 4 cups cubed potatoes (about 5 medium)
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika (smoked paprika is also good)
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons oil (plus more for frying)

Instructions

  1. Add potatoes to bowl: Add potatoes to a bowl with 2 tablespoons of oil and stir to coat.
  2. Season potatoes: Combine all of the seasonings, sprinkle over the potatoes, and stir to coat the potatoes evenly.
  3. Heat oil in skillet: Add the oil to a skillet large enough to hold all the potato pieces in a single layer and heat over medium-high heat for a few minutes.
  4. Brown potatoes: Add the potatoes and allow them to brown before stirring or flipping, about 5 minutes.
  5. Cook potatoes: Continue cooking and flipping occasionally until the potatoes are done.
  6. Check doneness: Potatoes are done when they are soft in the middle. Continue cooking for darker and crispier potatoes if desired.
  7. Drain potatoes: When the potatoes are done, remove them from the skillet and drain them on paper towels or a wire rack for a few minutes before serving.
