Instructions

  1. Making the Sauce Toss the zucchini slices, garlic, onion, olive oil, salt, and pepper together in a large bowl. Spread the mixture evenly on a sheet pan. Roast at 425°F for about 25 minutes, until the zucchini is tender and golden brown.
  2. Cook Pasta While the zucchini roasts, bring a large pot of salted water to a boil. Add your preferred pasta and cook until al dente.
  3. Drain Pasta Once the pasta is cooked, drain it while reserving a cup of the pasta water. Return the drained pasta to the pot.
  4. Blend Sauce Transfer the roasted mixture to a blender, add parmesan cheese and broth, and blend until smooth.
  5. Combine Pasta and Sauce Pour the creamy zucchini sauce over the pasta in the pot. If too thick, add reserved pasta water to desired consistency.
