- Making the Sauce Toss the zucchini slices, garlic, onion, olive oil, salt, and pepper together in a large bowl. Spread the mixture evenly on a sheet pan. Roast at 425°F for about 25 minutes, until the zucchini is tender and golden brown.
- Cook Pasta While the zucchini roasts, bring a large pot of salted water to a boil. Add your preferred pasta and cook until al dente.
- Drain Pasta Once the pasta is cooked, drain it while reserving a cup of the pasta water. Return the drained pasta to the pot.
