4.3 from 46 reviews

Pikkie’s Melkkos is a traditional South African comfort dish perfect for cozy rainy days. This creamy, cinnamon-infused milk porridge is made by gently cooking a luscious mixture of milk, flour, butter, and sugar to create a thick, velvety texture. Served warm with a sprinkle of cinnamon sugar and a dollop of butter, it’s a nostalgic recipe that soothes and delights with every spoonful.

Ingredients

Scale

Melkkos Base

  • 1 litre Full Cream Milk (semi-skimmed can be used as a substitute)
  • 130 grams All-Purpose Flour (adjust up to 180g for thicker melkkos)
  • 0.5 teaspoon Salt (adjust to taste)
  • 1 teaspoon Baking Powder
  • 50 grams Butter (cold, cubed; use real butter for best flavor)

Cinnamon Sugar Topping

  • 4 tablespoons Granulated Sugar (light brown sugar optional)
  • 1 teaspoon Ground Cinnamon (optionally add a cinnamon stick for infusion)

Instructions

  1. Prepare Cinnamon Sugar: In a small bowl, combine 4 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon to make the cinnamon sugar topping. Set aside for serving.
  2. Grease Saucepan: Use some cold butter to grease the bottom and sides of a large saucepan to prevent sticking and add flavor.
  3. Heat Milk: Pour 1 litre of full cream milk into the greased saucepan and gently heat it over medium-low heat until it just starts to simmer, stirring occasionally to avoid scorching.
  4. Mix Dry Ingredients: In a separate medium bowl, combine the all-purpose flour, salt, and baking powder. Add the cold, cubed butter and rub it into the flour mixture using your fingers until it resembles coarse breadcrumbs.
  5. Incorporate Flour Mixture: Gradually whisk the flour and butter mixture into the simmering milk, stirring constantly to ensure the batter is smooth and free of lumps.
  6. Cook Melkkos: Allow the mixture to gently boil on low heat for about 10 minutes, stirring occasionally until it thickens to a creamy consistency.
  7. Rest the Porridge: Remove the saucepan from heat and let the melkkos rest for 5 minutes to set and cool slightly.
  8. Serve: Spoon the creamy melkkos into serving bowls, generously sprinkle the prepared cinnamon sugar on top, and add a dollop of butter for extra richness. Enjoy warm for comforting flavor.

Notes

  • You can adjust the flour quantity to make the melkkos thicker or thinner depending on your preference.
  • Substituting semi-skimmed milk will reduce the richness but maintain creaminess.
  • For extra cinnamon aroma, add a cinnamon stick to the milk as it heats, removing it before adding the flour.
  • Use real butter for authentic flavor; margarine or butter substitutes may alter taste and texture.
  • Stirring continuously when adding flour helps prevent lumps and ensures a smooth porridge.
