Ingredients

Scale

Ingredients

  • 1 medium fresh pineapple (peeled, cored, diced)
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp ground ginger
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Pineapple: Peel, core, and dice the fresh pineapple into small chunks, making sure to remove any tough core pieces for the best texture.
  2. Make the Syrup: In a medium saucepan, combine the granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger. Heat the mixture over medium heat, stirring occasionally, until it comes to a gentle boil.
  3. Cook the Pineapple: Add the diced pineapple chunks to the boiling syrup. Reduce heat to low and let the mixture simmer for about 10 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  4. Cool and Garnish: Remove the pan from heat and allow the pineapple candy to cool for approximately 30 minutes. At this stage, optionally stir in fresh mint leaves to add a refreshing herbal note.
  5. Jar and Store: Transfer the cooled pineapple cowboy candy into sterilized jars and seal them tightly. Refrigerate the jars for at least 24 hours to allow the flavors to meld before serving.

Notes

  • Adjust the red pepper flakes according to your preferred spice level.
  • Use fresh pineapple for the best texture and flavor; canned pineapple is not recommended.
  • Sterilizing jars before storing helps prolong shelf life and safety.
  • After refrigeration, the candy can be stored in the fridge for up to 2 weeks.
  • Great as a topping for grilled meats, sandwiches, or as a spicy-sweet condiment for cheese plates.
