Brownies
- 7 oz dark chocolate (chopped (about 1¼ to 1½ cups), 2 of the 3.5 oz bars, 72% cocoa)
- ¾ cup salted butter ((1 1/2 sticks))
- 3 large eggs
- 1 cup granulated sugar
- ½ cup light brown sugar (tightly packed)
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- 2 tablespoons unsweetened Dutch process cocoa powder
Chocolate Frosting
- 2 cups powdered sugar
- ¼ cup unsweetened Dutch process cocoa powder
- 4 tablespoons salted butter
- 3 tablespoons hot water
- Rainbow chocolate chips or rainbow sprinkles for decoration
- Brownies Preheat oven to 350°F.
- Prepare Pan Spray a 9×13-inch cake pan with non-stick spray, then line with parchment paper, allowing some overhang for easy removal. Spray the parchment paper with additional non-stick spray.
- Melt Chocolate and Butter In a heatproof bowl set over simmering water (double boiler style), melt the chopped chocolate and butter, stirring until smooth. You can also microwave in 30-second bursts, stirring between each. Set aside.
- Mix Eggs and Sugars In a large mixing bowl, combine eggs, granulated sugar, and brown sugar. Beat on medium-high speed (hand or stand mixer) for 2 to 3 minutes, until lighter in color and slightly thickened.
- Add Chocolate Mixture and Vanilla Pour in the chocolate mixture, along with the vanilla and mix until incorporated.
- Add Flour and Cocoa Sift the flour and cocoa into the batter and mix on low speed just until smooth and lump-free.
- Spread Batter Spread the batter evenly in your prepared pan.
