Shrimp Salad

  • 1 tbsp green onion (finely chopped)
  • 1 stick celery (finely chopped)

For Cooking and Serving

  • olive oil (extra virgin recommended)
  • 4 pieces hot dog buns (or your favorite bread)
  • mayonnaise (for spreading inside the buns)

Instructions

  1. Preparation Steps: Start by preparing all ingredients. Peel and devein the shrimp if not already done, finely chop the green onion and celery, and chop the fresh dill.
  2. Preheat the Pan: Place a pan over medium-high heat and allow it to warm properly for even cooking.
  3. Sauté First Half of Shrimp: Add olive oil to the pan and add half of the shrimp. Season with salt and pepper. Cook for 2 minutes until the shrimp turn pink.
  4. Cook Remaining Shrimp: Flip the cooked shrimp and cook for another minute, then remove them from the pan. Repeat the same process with the remaining shrimp.
  5. Chop Shrimp: Take half of the cooked shrimp and chop into medium-sized pieces to add texture to the salad mixture.
  6. Mix the Shrimp Salad: In a bowl, combine all the cooked shrimp (whole and chopped) with mayonnaise, Dijon mustard, dill, green onion, celery, lemon juice, salt, and pepper. Mix well until evenly coated.
  7. Prepare the Buns: Slice the hot dog buns in half and spread a thin layer of mayonnaise on the inside surfaces.
  8. Toast the Buns: Using the same pan, place the buns mayonnaise-side down and toast until the bread is golden brown and slightly crispy.
  9. Assemble the Sandwiches: Fill each toasted bun with a generous portion of the shrimp salad mixture and serve immediately for the best flavor and texture.
