Crust
- 1/4 cup unsalted butter (softened)
- 2 tbsp granulated sugar
- 2/3 cup all-purpose flour
- Pinch salt

- 1/2 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1/2 tablespoon lemon zest
- 1 tablespoon all-purpose flour (sifted)

- Preheat oven and prepare pan: Preheat your oven to 325°F and line a loaf baking pan with parchment paper, leaving an overhang for easy removal.
- Make crust dough: In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the flour and salt, and mix until just combined.
- Bake crust: Press the dough evenly into the bottom of the prepared pan. Bake the crust for about 18-20 minutes, or until the edges are slightly golden brown. Remove from the oven.
