Scale

Dough Ingredients

  • 1 cup Warm Milk (Between 100°F to 110°F / 38°C to 43°C)
  • 2 tablespoons Instant Dry Yeast
  • 4 cups All-Purpose Flour (Measured by weight)
  • 1/2 cup Granulated Sugar (For dough)
  • 1 teaspoon Salt
  • 1 large Egg (At room temperature)
  • 1/2 cup Unsalted Butter (Very soft)

Strawberry Filling

  • 2 cups Fresh or Frozen Strawberries (Fresh is best)
  • 1/4 cup Granulated Sugar (For filling)
  • 1 tablespoon Lemon Juice (Enhances flavor)

Cream Cheese Glaze

  • 8 oz Cream Cheese (Softened)
  • 1/2 cup Unsalted Butter (Softened) [added based on typical cream cheese frosting]
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Cold Strawberry Puree (From filling)

Instructions

  1. Cook Strawberry Filling: In a medium saucepan over medium heat, combine the strawberries, granulated sugar, and lemon juice. Cook while stirring occasionally until the mixture thickens, about 10-12 minutes. Remove from heat and blend until smooth. Refrigerate the puree until cold.
  2. Prepare Dough: In a stand mixer fitted with a dough hook, combine flour, sugar, salt, and instant dry yeast. Add warm milk, softened butter, and the room temperature egg. Knead on medium speed for 5-7 minutes until the dough is smooth, elastic, and slightly tacky.
  3. First Rise: Lightly grease a large bowl, place the dough inside, and cover it with a clean towel or plastic wrap. Let it rise in a warm place for about 2 hours or until doubled in size.
  4. Shape Rolls: Punch down the risen dough gently and turn it out onto a floured surface. Roll it into a large rectangle. Spread the chilled strawberry filling evenly over the surface, then roll the dough tightly from one long edge to the other.
  5. Cut Rolls: Using a sharp knife or dental floss, slice the rolled dough into 12 equal pieces. Arrange the rolls tightly in a greased baking dish.
  6. Second Rise: Cover the rolls with a towel or plastic wrap and let them rise for another 30-60 minutes until puffed and nearly doubled.
  7. Bake Rolls: Preheat the oven to 350°F (180°C). Bake the rolls for 20-25 minutes or until they turn golden brown on top.
  8. Prepare Cream Cheese Glaze: In a medium bowl, beat the softened cream cheese, unsalted butter, powdered sugar, vanilla extract, and cold strawberry puree together until smooth and creamy.
  9. Glaze and Serve: Spread the creamy glaze over the warm rolls as soon as they come out of the oven. Serve immediately to enjoy their softness and fresh flavors.

Notes

  • Ensure the milk is not too hot when activating yeast to avoid killing it.
  • Using fresh strawberries will yield the best flavor, but frozen can be used if fresh are out of season.
  • For an extra soft dough, avoid adding too much flour during kneading.
  • The cream cheese glaze can be refrigerated for up to 3 days in an airtight container.
  • Rolls are best eaten fresh but can be reheated gently to restore softness.
