Ingredients

Scale

Cheesecake Mixture

  • 8 oz Cream Cheese (Ensure well-softened)
  • 1/2 cup Granulated Sugar (Divided for different uses)
  • 1/2 cup Sour Cream (Adds tanginess and improves texture)
  • 1 cup Heavy Cream (Use cold for better incorporation)
  • 1 tsp Vanilla Extract (Pure vanilla preferred)

Strawberry Syrup

  • 1 cup Crushed Strawberries (Fresh or slightly thawed frozen)
  • 1/2 cup Granulated Sugar (Remaining for strawberry mixture)

Graham Cracker Mixture

  • 1 cup Crushed Graham Crackers (Can substitute with crushed cookies)
  • 1/4 cup Melted Butter (Add more if too dry)
  • 1/4 cup Graham Cracker Crumbs (Ensure finely crushed)
  • 1/2 cup White Chocolate Chips (Optional, enhances flavor)

Instructions

  1. Preparation Steps In a large bowl, beat softened cream cheese and 1/2 cup of granulated sugar until smooth. Scrape down the bowl’s sides for an even mixture.
  2. Mix Cheesecake Base Gently add sour cream, heavy cream, and vanilla extract. Mix on low until just combined, being careful not to overmix.
  3. Prepare Strawberry Syrup In a separate bowl, combine crushed strawberries with the remaining 1/2 cup of sugar. Let it sit for 10-15 minutes to create a syrup.
  4. Make Graham Cracker Mixture In another bowl, mix crushed graham cracker crumbs with melted butter. If using white chocolate chips, stir them in until the mixture is moistened.
  5. Blend Mixtures and Shape Fold the graham cracker mixture into the cheesecake batter. Scoop portions and roll them into 1-1.5 inch balls. Freeze for 1-2 hours until firm.
  6. Finish and Chill Carefully swirl a small amount of the strawberry syrup into each cheesecake ball. Then, roll them in the graham cracker coating. Freeze again for at least an hour before serving.

Notes

  • Ensure cream cheese is well-softened for smooth mixing.
  • Use cold heavy cream for better incorporation.
  • Additional butter can be added if the graham cracker mixture feels too dry.
  • White chocolate chips are optional but enhance the flavor.
  • Freezing time is important to achieve firm pops.
