This Strawberry Oatmeal Crisp combines fresh or frozen strawberries with a crunchy oat topping for a delicious and easy dessert baked to perfection in just over an hour.

Strawberry Filling

  • 6 cups strawberries (sliced, fresh or frozen (don’t thaw); about 1 and 1/2 pounds)
  • 1/41/3 cup honey (adjust to sweetness of berries)
  • 1 tbsp lemon juice
  • 1 and 1/2 tsp vanilla extract

Oatmeal Topping

  • 1/3 cup butter
  • 1 cup large flake rolled oats (certified GF, if needed)
  • 1/2 cup oat flour (certified GF, if needed)
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat and Combine Filling: Preheat the oven to 350 °F. In a 7×11 inch or similar size baking dish, combine all of the ingredients for the strawberry filling.
  2. Prepare Topping: In a medium, microwave safe bowl, melt the butter for 30 seconds. Add remaining oatmeal topping ingredients and mix until well combined.
  3. Assemble and Bake: Pour the oatmeal crumble topping evenly over filling and bake for 45 minutes.
  4. Set and Serve: Remove from oven and allow to sit for 5 minutes to set and then serve.

Notes

  • Adjust honey amount to the sweetness of the berries.
  • Use certified gluten free oats and oat flour if needed.
  • Allow to sit for 5 minutes after baking to set before serving.
