  • 1 1/4 cup all purpose flour
  • 1/4 teaspoons salt
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons baking powder
  • 1/2 cup butter (softened)
  • 1/2 cup granulated sugar
  • 1 medium egg (room temperature)
  • 1/2 teaspoons peppermint extract
  • 1/2 teaspoons vanilla extract
  • green gel food coloring

Instructions

  1. Step 1: In a large mixing bowl, whisk the flour, salt, baking powder and baking soda.
  2. Step 2: In another bowl, beat the butter and sugar together until light and fluffy.
  3. Step 3: Add peppermint and vanilla extracts and mix well. Add your egg and beat until well blended.
  4. Step 4: Add the flour mixture a little at a time, scraping down the sides of the bowl until fully incorporated.
  5. Step 5: Scoop or form 2″ balls with the cookie dough. Place 2″ apart on a lined baking sheet.
  6. Step 6: Chill for about 20-30 minutes in the refrigerator. Don’t skip this step.
  7. Step 7: Bake cookies at 350 degrees F for 6-8 minutes.
  8. Step 8: Cookies should be soft when removed. Allow to cool on baking sheet. Decorate as desired.

  • Don’t skip the chilling step; it helps maintain the cookie shape during baking.
