Ingredients

Scale

Salad Ingredients

  • 10 ounces cherry tomatoes, cut in half
  • 1/2 medium red onion, thinly sliced
  • 1 12-ounce jar marinated artichoke hearts, strained
  • 1 15-ounce can cooked chickpeas, drained, rinsed and dried (about 1 1/2 cups cooked chickpeas)
  • 2 Tablespoons fresh basil, cut into thin strips
  • 2 Tablespoons fresh chives, finely diced
  • 1 Tablespoon capers

Vinaigrette

  • 1/4 cup olive oil
  • 2 Tablespoons vinegar
  • 1 teaspoon dried parsley
  • 1/4 to 1/2 teaspoon salt, to taste
  • 1/2 teaspoon garlic powder (or 1 garlic clove finely minced)
  • 1/4 teaspoon ground black pepper

Instructions

  1. Prepare the vegetables and herbs: Cut the cherry tomatoes in half. Thinly slice the red onion. Finely chop the chives and cut the basil into long thin strips. Strain the marinated artichoke hearts from their liquid and set aside. Rinse, drain, and pat dry the canned chickpeas to remove excess moisture.
  2. Make the Tuscan vinaigrette: In a bowl, whisk together olive oil, vinegar, dried parsley, salt, garlic powder, and ground black pepper until thoroughly combined and emulsified.
  3. Toss the salad: In a large bowl, combine the prepared tomatoes, red onion, chives, basil, artichoke hearts, chickpeas, and capers. Pour the vinaigrette over the ingredients and gently mix until all components are evenly coated.
  4. Serve or chill: Serve the salad immediately for fresh flavors, or refrigerate it for 1 to 2 hours to allow the flavors to meld for a richer taste. Enjoy as a light appetizer or side dish.

Notes

  • You can use fresh garlic instead of garlic powder for a more pungent flavor.
  • Chilling the salad for 1-2 hours enhances the flavor as the vinaigrette marinates the vegetables.
  • Feel free to add additional fresh herbs like oregano or thyme for variation.
  • This salad can be made vegan and gluten-free as is.
  • Adjust the salt level according to your preference.
