  • 1 tsp vanilla extract

  • 0.25 cup chopped walnuts or almonds
  • 2 tbsp unsweetened shredded coconut
  • 0.25 cup unsweetened dark chocolate chunks (or cacao nibs)
  • 2 tbsp chopped dates or raisins (optional)

Instructions

  1. Preheat oven. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash bananas. Mash ripe bananas in a mixing bowl until smooth.
  3. Mix wet ingredients. Add almond butter, vanilla, cinnamon, and salt; mix until combined.
  4. Add dry ingredients. Stir in oats and any optional mix-ins such as nuts or dark chocolate.
  5. Shape cookies. Scoop dough onto baking sheet and flatten slightly.
  6. Bake cookies. Bake for 12–15 minutes until firm and lightly golden.
  7. Cool. Cool on wire rack before serving.
