  • 1 can pineapple slices (drained)
  • 1/4 cup sweet chili sauce (or homemade blend)
  • 1/4 cup unsalted butter (melted)
  • 2 tablespoons hoisin sauce (or teriyaki sauce)
  • 2 tablespoons fresh lemon juice (fresh when possible)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh cilantro (optional)
  • 2 slices lime (for serving)

Instructions

  1. Cooking Instructions Preheat the oven to 375°F (190°C) and line a baking sheet with nonstick aluminum foil.
  2. Season Salmon Season the salmon with salt and pepper, placing it skin-side down on the lined baking sheet.
  3. Arrange Pineapple Arrange the drained pineapple slices underneath the salmon.
  4. Prepare Glaze Whisk together sweet chili sauce, melted butter, hoisin sauce, minced garlic, fresh lemon juice, and reserved pineapple juice. Pour this glaze over the salmon.
  5. Bake Salmon Bake for 15 minutes or until the salmon is flaky and fully cooked. Optionally broil for the last 5 minutes.
