- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 medium eggplant, sliced into rounds
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/3 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped

- Cook the orzo: Cook the orzo in salted boiling water according to package instructions until tender, then drain and set aside.
