  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the orzo: Cook the orzo in salted boiling water according to package instructions until tender, then drain and set aside.
  2. Grill the eggplant: Preheat a grill pan or skillet over medium-high heat. Brush eggplant slices with olive oil, season with salt and pepper, and grill for 3–4 minutes per side until tender and slightly charred.
  3. Season the chicken: Season the chicken breasts with salt, pepper, oregano, and thyme.
  4. Cook the chicken: Heat 1 tablespoon olive oil in a skillet over medium heat and cook the chicken for 5–6 minutes per side until fully cooked. Remove and let rest.
  5. Make the balsamic glaze: In the same skillet, add balsamic vinegar, honey, and minced garlic. Simmer for 2–3 minutes until slightly thickened.
  6. Glaze the chicken: Slice the chicken and return it to the skillet, tossing it in the balsamic glaze until well coated.
  7. Combine orzo and eggplant: In a serving dish, combine the cooked orzo with grilled eggplant.
  8. Serve: Top with sliced balsamic glazed chicken, then sprinkle with feta cheese and fresh parsley before serving.
