Berry Puree
- 300 g of mixed berries
- 80 g of granulated sugar
- 15 ml of lemon juice
Gelatine
Cream Mixture
- 500 ml of fresh whipping cream
- 100 g of icing sugar
- 1 vanilla bean
Garnish
- 100 g of fresh berries
- 5 g of icing sugar
- fresh mint leaves
- Blend and Heat Puree: Blend the berries with the granulated sugar and lemon juice. Pass the mixture through a fine-mesh sieve to remove the seeds and gently heat the resulting puree in a small saucepan.
- Dissolve Gelatine: Soak the gelatine in cold water for 10 minutes, squeeze it well, and add it to the warm puree, stirring vigorously until completely dissolved. Let cool to room temperature.
- Whip Cream: Whip the cold cream together with the icing sugar and vanilla seeds until you obtain a firm but silky consistency.
- Fold Puree into Cream: Gently fold the berry puree into the whipped cream using a spatula, moving from the bottom up.
- Chill Mixture: Pour the mixture into the mold, level the surface, cover with cling film and place in the refrigerator for at least 6 hours.
- Garnish and Serve: Garnish with fresh berries, a dusting of icing sugar and mint leaves before serving.
Notes
- Soak the gelatine for 10 minutes before use.
- Chill the mixture in the refrigerator for at least 6 hours to set properly.
