This Bavarian Cream with Berries is a smooth, fresh dessert that combines a luscious berry puree with silky whipped cream, set to a delicate gelatine texture and garnished with fresh fruits and mint.

Ingredients

Berry Puree

  • 300 g of mixed berries
  • 80 g of granulated sugar
  • 15 ml of lemon juice

Gelatine

  • 12 g of gelatine

Cream Mixture

  • 500 ml of fresh whipping cream
  • 100 g of icing sugar
  • 1 vanilla bean

Garnish

  • 100 g of fresh berries
  • 5 g of icing sugar
  • fresh mint leaves

Instructions

  1. Blend and Heat Puree: Blend the berries with the granulated sugar and lemon juice. Pass the mixture through a fine-mesh sieve to remove the seeds and gently heat the resulting puree in a small saucepan.
  2. Dissolve Gelatine: Soak the gelatine in cold water for 10 minutes, squeeze it well, and add it to the warm puree, stirring vigorously until completely dissolved. Let cool to room temperature.
  3. Whip Cream: Whip the cold cream together with the icing sugar and vanilla seeds until you obtain a firm but silky consistency.
  4. Fold Puree into Cream: Gently fold the berry puree into the whipped cream using a spatula, moving from the bottom up.
  5. Chill Mixture: Pour the mixture into the mold, level the surface, cover with cling film and place in the refrigerator for at least 6 hours.
  6. Garnish and Serve: Garnish with fresh berries, a dusting of icing sugar and mint leaves before serving.

Notes

  • Soak the gelatine for 10 minutes before use.
  • Chill the mixture in the refrigerator for at least 6 hours to set properly.
