Main Ingredients
- 1 teaspoon thyme
- 1 teaspoon cumin
- 1 teaspoon marjoram
- 1 teaspoon garlic salt
- ¼ cup fresh coriander 15g, chopped
- 500 g chicken mince
- 1–2 potatoes or 100–150g ready-made fries
- ½ lemon juiced
- ½ cup tzatziki 120g
- ½ cup cherry tomatoes 75g, chopped
- ½ cup cucumber 75g, chopped
- 1 red onion diced
- 8 mini tortillas
- Salt and pepper to taste
- 1 teaspoon cooking oil
- 1 teaspoon paprika
- Prepare fries: If you choose to cook your own fries for the Chicken Gyros Smash Tacos, start by peeling and slicing a potato into thin, even slices, then cut each slice into skinny fries.
- Soak fries: Soak the fries in cold ice water for a few minutes to remove excess starch. After soaking, pat the fries dry with a kitchen towel, then toss them in a bowl with a bit of oil, salt, and paprika.
- Cook fries: Preheat your air fryer to 200°C (about 400°F) and spread the fries in a single layer in the basket. Cook for 20-25 minutes.
- Mix chicken: In a large mixing bowl, combine the chicken mince with thyme, cumin, marjoram, the juice of half lemon and garlic salt. Mix thoroughly until the spices are evenly distributed throughout the meat.
- Add coriander: Add the chopped fresh coriander to the gyros smash tacos mixture and mix again until everything is well combined.
- Prepare tortillas: Lay out the mini tortillas and spoon about 1 tablespoon of the chicken mixture onto each one. Press down firmly to spread the mixture evenly across the surface of the tortilla.
- Cook chicken on tortillas: Heat a large pan over medium-high heat and add 1 teaspoon of cooking oil. Place one or two tortillas in the pan, chicken side down, depending on the size of your pan. Cook for about 3 minutes until the chicken is golden and slightly crispy. Lower the heat to medium-low and cook for an additional 2 minutes.
- Flip and finish cooking: Flip the tortillas over and cook for another minute to ensure the chicken is fully cooked through. Add more oil if necessary for each tortilla.
- Add toppings: Remove the tortillas from the pan and spread a generous layer of tzatziki on top.
- Assemble tacos: Add a few fries or crispy potato slices, followed by chopped cucumber, cherry tomatoes, and diced red onion. Drizzle with a little more tzatziki and garnish with fresh coriander.
