  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1/2 cup chicken broth
  • 1/3 cup honey
  • 1 cup dried cranberries
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts: Season chicken breasts with garlic powder, paprika, salt, and black pepper.
  2. Sear chicken: Heat olive oil in a large skillet over medium-high heat and sear chicken for 4–5 minutes per side until golden brown, then remove and set aside.
  3. Make sauce: In the same skillet, add orange juice, orange zest, chicken broth, honey, cranberries, and soy sauce, stirring well and bringing to a simmer.
  4. Cook chicken in sauce: Return chicken to the skillet and cook for 10–12 minutes, spooning sauce over the top as it absorbs flavor.
  5. Thicken sauce: Stir in cornstarch slurry and simmer for 2–3 minutes until sauce thickens and becomes glossy.
  6. Finish and serve: Finish with fresh parsley, spoon extra sauce over chicken, and serve warm.
